Preparation procedure

  • Prepare the dough In a bowl mix the plain flour, powdered sugar, softened butter, sour cream, egg yolks and baking powder. Work into a smooth, non-sticky dough. Wrap it in plastic wrap and let it rest in the refrigerator for 30 min.
  • Prepare the poppy seed filling In one bowl mix the dry ingredients: semi-coarse flour, ground poppy seeds, powdered sugar, vanilla sugar, baking powder and a pinch of salt. In another bowl combine the liquid ingredients: milk, melted butter, lemon juice and zest. Whisk the egg whites with a pinch of salt to stiff peaks and very gently fold them into the combined dry and liquid ingredients.
  • Assemble the cake Preheat the oven to 180 °C. Divide the dough into two halves. Roll out the first part to the size of the baking tray (30 × 20 cm) and transfer it to the bottom of a greased or parchment-lined tray. Evenly spread the poppy seed filling over it. Roll out the second half of the dough and cover the layer of poppy filling with it. Prick the surface several times with a toothpick.
  • Baking Bake in the preheated oven for 35–40 min, until the dough is golden and the filling is cooked through. Let the finished cake cool slightly on the tray, then cut into portions.
