This traditional poppy seed strudel made from delicate puff pastry and a juicy poppy seed filling can be easily prepared at home following grandma’s recipe. The airy dough, rich poppy filling and crispy crust make it a favorite dessert for Sunday coffee as well as for festive tables.

Preparation procedure

  • Preparation of the starter and dough Dissolve the yeast in the lukewarm milk with 50 g of sugar. Let stand for 10–15 minutes until it starts to bubble. Sift the flour into a bowl, add the butter cut into cubes and work it in with your fingers until it forms a crumbly texture. Stir in the egg, a pinch of salt and the risen starter. Knead until you have a smooth, non-sticky dough. Divide into 3 parts, shape into balls, cover with cling film and let rest in the refrigerator for 30 minutes.
  • Preparing the poppy seed filling Scald the raisins in hot milk and let them swell for 5 minutes. Bring the remaining milk to a boil with the sugar and vanilla sugar. Add the poppy seeds, breadcrumbs, lemon zest and raisins. Stir for 1–2 minutes until the mixture comes together, then let it cool completely.
  • Filling and rolling Roll each ball into a rectangle 3–4 mm thick. Spread a third of the poppy seed filling over the dough, leaving a 1 cm border free. Fold the longer edges inward by about 1 cm, then roll the dough tightly from the shorter side. Place the strudels on a baking tray lined with parchment paper and prick the surface with a fork.
  • Final proofing and baking Let the strudels proof for 15–20 minutes. Brush with the egg yolk and leave for another 15–20 minutes at room temperature. Preheat the oven to 170 °C and bake for 30–35 minutes until the strudels are golden. After baking, let cool completely before slicing into pieces.
