- Preparing the batter: Using an electric mixer, whip the egg whites with a pinch of salt to stiff peaks. Then gradually beat in the powdered sugar and the yolks. Gently fold in the mixture of flour, Solamyl, and baking powder. Spread the batter evenly onto a baking tray lined with parchment paper. Bake in a preheated oven at 200 °C for about 10 minutes, until the sheet is nicely golden. Let it cool completely.
- Preparing the cream: In a bowl, whip the mascarpone with the powdered sugar. Gradually add the stabilizer and whisk until a smooth cream forms.
- Assembling the roulade: Spread the prepared cream over the cooled cake sheet. Soak the ladyfingers in the strong coffee mixed with Amaretto and arrange them on the cream in three rows along the length of the sheet. Using the parchment paper, begin to roll the cake and gradually tighten it to form a firm roulade.
