Preparation procedure

  • Preparation of the base: Whip the egg whites and a pinch of salt into stiff peaks. Gradually beat in the sugar until you get a glossy, firm meringue. Fold in the egg yolks one at a time. Mix the ground hazelnuts with the baking soda and add to the egg mixture. Finally stir in the breadcrumbs and gently combine into a smooth batter.
  • Baking: Spread the batter evenly on a baking sheet lined with parchment paper. Bake in a preheated oven at 180 °C for about 20 minutes. Let the base cool.
  • Preparation of the cream: Lightly toast the chopped walnuts in a dry pan and let cool. Beat the butter until fluffy and gradually beat in the caramelized condensed milk. Stir the toasted nuts into the finished cream.
  • Finishing: Spread the prepared cream over the cooled base. Level it out and sprinkle the top with chopped nuts. Refrigerate the pastry for at least 2–3 hours so it can set nicely.
