Preparation procedure

  • In one bowl mix the egg yolks, water, both flours, coconut fat (melted), baking soda (a pinch), psyllium, honey and mix thoroughly. Let the batter rest, since there are flakes and fiber (see video). Gently fold the whipped egg whites into the batter and finally add the cranberries.
  • Put 3/4 of the batter into a silicone mold, mix Dutch cocoa into the remaining 1/4, stir and put it on top of the batter and work it in as shown in the video.
  • Finally put the bundt cake in the oven at 185ºC for approximately 45 minutes. However, it depends on your oven; each bakes differently :)
  • After baking take it out (we recommend following the video) and let it cool. Prepare the icing by mixing the protein with water and spread it on the top, sprinkle with coconut and serve.
