This zucchini and cottage cheese loaf is an ideal choice for anyone looking for a healthy and tasty meal. It is suitable for vegetarians, those dieting, and anyone who wants something light yet filling. In addition, its preparation does not take much time and the result is definitely worth it!

  • 1. Preparing the zucchini batter: Grate the zucchini on a coarse grater, salt it and let it sit for 10 minutes to release its water. Then squeeze the zucchini well.
  • 2. Mixing the ingredients: Separate the yolks from the whites. In a bowl mix the yolks, flour, sour cream and baking powder. Season with pepper and mix well. Whip the egg whites to stiff peaks. Add part of the whipped egg whites to the mixture of yolks, flour and sour cream, then add the zucchini. Mix and add the remaining egg whites.
  • 3. Baking the batter: Preheat the oven to 180 °C. Grease a baking dish with butter or line it with baking paper and put the prepared batter on it. Bake 15-20 minutes, until the batter turns golden. After baking, let the batter cool on dry paper covered with a towel.
  • 4. Preparing the filling: Meanwhile prepare the filling. Mix the cottage cheese with chopped dill, parsley and crushed garlic. Salt, pepper, and spread the mixture evenly on the cooled batter (about two-thirds).
  • 5. Rolling and chilling: Roll the batter into a roulade and place it in the fridge for 2-3 hours so the filling can set. Then cut into smaller pieces and serve.
