Homemade potato pancakes are among the most typical dishes of Czech cuisine.

The aroma of garlic, marjoram and caraway, a crispy exterior and a soft center – exactly the way we remember them from childhood. This version with cracklings is even heartier and more filling, while remaining simple and time-tested.

These aren’t any modern tweaks, but a classic recipe that has worked for years and always turns out well.

Preparation procedure

  • Preparation of the potatoes Grate the potatoes finely. If they release a lot of liquid, drain it off slightly, but do not squeeze them completely – the starch is important for the correct consistency.
  • Base of the mixture Add the eggs, finely chopped onion, pressed garlic and cracklings to the potatoes. Season with salt, pepper, crushed caraway seeds and rubbed marjoram.
  • Adjusting the consistency Thoroughly mix the mixture. If it is too loose, add at most 1 tablespoon of plain flour. The proper mixture holds its shape but is not dense.
  • Frying Heat enough oil in a pan. Use a spoon to form thin patties and fry on both sides until golden. The oil should not smoke so the potato pancakes cook evenly.
  • Finishing Place the finished potato pancakes on a paper towel to absorb excess fat. Serve immediately while they are nicely crispy.
