Light as a cloud, fresh and yet beautifully creamy. This “heavenly” cake rests on a very light egg-white coconut base, a juicy cherry layer, a fluffy vanilla cream and a glossy chocolate glaze. An ideal dessert for celebrations and weekend indulgence.

Preparation procedure

  • Base Preheat the oven to 180 °C. Whisk the egg whites until stiff, gradually whisk in the sugar. On the lowest speed fold in the flour and coconut. Spread the batter onto a tray lined with baking paper and bake for 15–20 minutes until lightly browned. Let cool.
  • Cherry layer Drain the cherries, reserving the juice. In part of the juice whisk together the pudding powder and sugar, bring the rest to a boil. Stir in the mixed pudding and briefly cook until thickened. Add the cherries, mix, let cool for a few minutes and spread over the cooled base.
  • Vanilla cream From the milk, sugar and 2 packets of pudding powder cook a thick pudding, cool completely (cover the surface with cling film). Whip the cream to stiff peaks and gently fold it into the cold pudding. Spread the cream evenly over the cherry layer.
  • Chocolate glaze Slowly melt the chocolate with the butter in a bain-marie or over very low heat until smooth. Pour the lukewarm glaze over the cream, spread it and refrigerate the cake for at least 3 hours (preferably overnight) to chill and set.

Serving and tips

  • Cut with a sharp knife dipped in hot water and wiped dry – the slices will be clean.

  • For a festive look you can decorate the surface with grated chocolate or shavings.

  • Cherries can be replaced with cherries or currants, always use the juice to cook the pudding – the layer will hold beautifully.
