This poppy seed and cherry bread pudding brings a new dimension to a classic dessert. The combination of sweet vanilla custard, tart cherries and poppy seeds is irresistible. And the best part is that you can use leftover bread you have at home. Prepare this delicious treat and you’ll see that your family will love it right away!

  • 1. Preparation of the vanilla custard: Scrape out the interior of the vanilla pod and put it into the milk along with the pod. Heat the milk to boiling. Meanwhile, beat the yolks (from 4 eggs) with 50 g of sugar until smooth. Remove the vanilla pod from the milk and gradually pour the milk into the yolk mixture. Then heat over low heat until the mixture slightly thickens.
  • 2. Preparing the rolls: Slice the rolls into rounds and dip them into the vanilla custard for a few minutes so they absorb it well.
  • 3. Poppy seed mixture: Mix the ground poppy seeds with 50 g of powdered sugar.
  • 4. Assembling the bread pudding: Grease a baking dish with butter. Place a layer of soaked rolls on the bottom, then sprinkle with poppy seeds and add some cherries. Repeat this process until the dish is full. The top layer should be rolls.
  • 5. Baking: Place the baking dish in a preheated oven and bake at 190 °C for 15–20 minutes.
  • 6. Preparing the meringue: Whip the egg whites from 4 eggs into stiff peaks. Gently fold the cherry jam into the whipped whites.
  • 7. Final baking: After the first bake, remove the dish from the oven, pour the whipped meringue over the rolls and return to the oven. Bake for another 10 minutes until the meringue turns golden.
