Preparation procedure

  • Dough preparation: In a bowl, mix the ground nuts, flour, powdered sugar and baking soda. Add the softened butter and work into a smooth dough. Do not let it rest, as it could become too moist – work with the dough immediately.
  • Filling the molds: You do not need to grease or flour the crescent cookie molds. Fill them to about two-thirds – the dough will rise slightly during baking. If you filled the molds to the rim, the crescents could lose their shape or overflow.
  • Baking: Bake the crescent cookies in a preheated oven at 175 °C with fan for 10–12 minutes. Watch them – they should be light golden, not dark. After baking, let them cool briefly in the molds and then carefully unmold them.
  • Care of the molds: Do not wash the molds with detergent after use – simply rinse them with hot water and dry thoroughly. Moist molds would cause the dough to stick after baking.

Tips and variations

  • Instead of hazelnuts you can also use walnuts, almonds or pistachios.

  • If you choose coconut, reduce its amount to 230 g and blend it beforehand to achieve a finer texture.

  • Do not reduce the sugar in the recipe – it is not only a sweetener but also helps the dough’s stability. Thanks to it the crescents remain tender, do not fall apart and have their characteristic texture.
