This old recipe, without using gelling agents, relies on simplicity and maximum preservation of natural flavor and beneficial substances. The result is a jam that will warm you even in the middle of winter.

Preparation procedure

  • Preparing the currants Remove the stems from the currants, wash thoroughly and let drain. To speed drying, you can spread them out on a clean towel.
  • Preparing the syrup In a wide pot mix 250 ml water and 250 g sugar. Bring to a boil and, stirring constantly, create a clear syrup.
  • Cooking in batches Add a cup of currants to the syrup and cook for about 6 minutes from the boiling point. During cooking skim off the foam and stir gently. Then add the next portion of sugar and currants and repeat the process until you have processed all the ingredients.
  • Thickening and finishing Once all the currants and sugar are added, cook for another 5–10 minutes over low heat. Check the consistency with a drop of jam on a cold plate – if it doesn't run, it's done.
  • Canning While still hot, fill the jam into sterilized jars. Immediately seal, turn upside down and let cool slowly.
