  • Mixing without kneading Pour the flour mixture over the water with dissolved yeast and use a spoon or spatula to combine into a smooth, sticky mass. Don’t strain your hands – the dough doesn’t need to be kneaded.
  • First rise Cover the bowl with plastic wrap with a small hole for air. Leave in a warm place to rise for 2 hours, until it doubles in volume.
  • Shaping the loaf On a lightly floured work surface sprinkle a little flour, pull the dough from the bowl with hands dusted in flour and transfer it to a baking sheet lined with parchment paper. Lightly shape it into a loaf or a ball – no further kneading is necessary.
  • Second rise Leave the loaf on the sheet, covered only with a towel or loosely covered, for 40–60 minutes, until the surface softens and shows small bubbles.
  • Baking Preheat the oven to 235 °C (middle rack). Place the loaf in the oven and bake for 45 minutes until golden. For an extra-crispy crust you can put a bowl of water on the bottom of the oven before placing the bread inside.
  • Cooling and storage Let the baked bread cool on a rack. If you want to keep it moist longer, store it in the refrigerator – it will keep up to 2 weeks without drying out.
