  • Sterilizing jars: Place clean canning jars into a cold oven, set it to 100 °C and let them heat for 20 minutes. Then let them cool down.
  • Preparing the vegetables: Grate the cabbage (remove any tough parts), cut the carrots into rounds or grate them as well. Slice the cucumbers and cut the peppers into smaller pieces.
  • Mixing the mixture: Thoroughly mix all the vegetables in a large bowl so the flavors combine evenly.
  • Filling the jars: Pack the prepared vegetable mixture firmly into the jars up to the rim.
  • Adding spices and brine: Into each jar add: 1–1.5 teaspoons of salt 1 teaspoon of sugar 2–2.5 tablespoons of vinegar a few whole black peppercorns and 1 bay leaf fill with water to the rim and close tightly with a lid.
  • Pasteurization: Place the jars into a cold oven, set the temperature to 90 °C and pasteurize for 1.5 hours. Then turn off the oven and leave the jars to cool inside the oven until the next day.
  • Storage: Store the relish in a dark, cool place. After opening, keep refrigerated and use within 7 days.
