The caramel cream puff is an icon of Czech patisseries and cafés. It combines light, delicate choux pastry with a sweet caramel cream and a glossy caramel glaze. Although the preparation requires several steps, the result will definitely pay off – the cream puffs disappear before they have time to cool.

Preparation procedure

  • Preparation of the choux pastry Bring the water, Heru and a pinch of salt to a boil in a pot. Once the fat has melted, reduce the heat and add the sifted flour. Stir until the dough begins to pull away from the sides of the pot and a smooth paste forms. Remove from the heat and let the dough cool slightly (about 5 minutes). Beat in the eggs one at a time into the lukewarm dough, mixing well after each addition.
  • Baking the cream puffs Preheat the oven to 200 °C. Transfer the dough to a piping bag fitted with a round tip and pipe cream puffs with a diameter of 6–8 cm onto a baking sheet lined with parchment paper. Bake for 30 minutes, do not open the oven during baking. After baking, let the cream puffs cool.
  • Preparing the caramel cream Carefully heat the granulated sugar in a saucepan over medium heat until it turns a golden color. Slowly pour the hot heavy cream into the melted sugar and stir until a smooth caramel forms. Let the caramel cool to room temperature. Beat the sifted powdered sugar into the cooled caramel until the cream thickens and acquires a fluffy consistency.
  • Preparing the caramel glaze As with the cream, dissolve the granulated sugar until golden, then slowly pour in the hot heavy cream and stir. Once the caramel has dissolved, remove from the heat and stir in the powdered sugar until smooth. The glaze should be fluid but not too thin.
  • Assembling the cream puffs Cut the cooled cream puffs in half. Fill the bottom halves with the caramel cream, replace the tops and coat with the caramel glaze. Let the glaze set briefly and serve.
