Ingredients: 250 ml water; Hera; a pinch of salt; 400 g sifted plain flour; 8 eggs; 240 g granulated sugar; 1 caramel pudding; 250 ml milk; 125 g butter; 250 ml whipping cream; 300 g sifted powdered sugar; 250 ml hot whipping cream; 100 g granulated sugar

Dough preparation In a saucepan, bring the water, Hera and a pinch of salt to a boil. Once the fat has melted, reduce the heat and gradually add the flour. Stir vigorously until a smooth dough forms that does not stick to the sides of the pan. Allow to cool and gradually beat the eggs into the dough.

Shaping and baking Transfer the dough to a piping bag and pipe the cream puffs onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for about 30 minutes, until golden. Let cool.

Filling preparation Caramelize the granulated sugar in a pan. Meanwhile, cook the caramel pudding in milk and let it cool. Mix the caramel with the pudding, add the butter and mix thoroughly. Finally, fold in the whipped cream.

Glaze preparation Caramelize the sugar in a dry pan and carefully add the hot whipping cream. Stir the mixture well and combine with the powdered sugar until a smooth glaze forms.
