You only need chicken meat, salt and a few spices. The result is a ham that is much higher quality and tastier than the store-bought one.

  • meat preparation Wash the chicken breasts and cut into thin strips, then chop finely. Do the same with the chicken thighs. Transfer both into a large bowl.
  • seasoning and resting Season the meat with salt, pour in the ice water and mix well. Cover with plastic wrap and let rest for 2–3 hours in the refrigerator.
  • forming the ham Remove the meat from the fridge, add the spices (pepper, coriander, garlic) and mix well again. Divide into two portions, shape into cylinders, wrap in plastic wrap and tie tightly.
  • cooking Place into a pot with hot water at 80 °C (the water must not boil). Cook for 1 hour, then remove the ham and cool it in ice water.
