Ingredients: 750 ml water; 1 block of Hera (250 g); a pinch of salt; 400 g plain flour (sifted); 8 eggs; 1 caramel pudding; 500 ml milk; 150 g butter; 250 ml whipping cream; 250 g granulated sugar; 250 ml hot whipping cream; 300 g powdered sugar (sifted)

Preparation of the dough: In a pot bring the water, Hera and a pinch of salt to a boil. As soon as the fat has melted, add the plain flour and stir until a compact dough forms that does not stick to the sides of the pot. Let it cool slightly and then gradually beat the eggs into it to form a smooth choux pastry.

Shaping the cream puffs: Transfer the dough into a piping bag and pipe cream puffs onto a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for about 30 minutes, until golden and puffed. After baking, let them cool completely.

Preparation of the filling: Cook the caramel pudding according to the instructions, let it cool and beat in the softened butter. Whip the cream separately until stiff. Slice each cream puff and fill the bottom half with the pudding cream, then add a layer of whipped cream.

Preparation of the glaze: Pour the granulated sugar into a pan and let it caramelize. Once the caramel has a golden color, carefully pour in the hot cream and stir until the caramel dissolves. Finally stir in the powdered sugar to create a smooth glaze.
