This homemade dumpling is an ideal side dish that tastes great and will help you use up older bread. You can also prepare the dumplings in advance and freeze them for later.

Preparation procedure

  • Preparing the bread: Put the chopped bread into a bowl and pour a little milk over it. Add milk as needed so the bread is slightly moistened, but not too soggy.
  • Preparing the onion and bacon: Finely chop the onion and sauté it in a little oil until golden. Add the chopped bacon and fry together over low heat until the bacon is lightly browned.
  • Mixing the ingredients: To the moistened bread add the fried mixture of onion and bacon, chopped parsley, beaten eggs, salt, pepper and a pinch of nutmeg. Mix well until a sticky mass forms (add more milk if necessary).
  • Shaping the dumplings: Let the mixture rest for 15 minutes. Then transfer it into food-grade cling film, a cloth or a meat-press bag. Tie both ends tightly.
  • Cooking: Cook the dumplings in boiling water for about 25 minutes. For even better flavor you can cook the dumplings directly in broth, which will give them even more flavor.
