Ingredients

To finish:

Preparation procedure

  • Dough and first rise Put all ingredients into a bowl (or into the bread machine) and work into a smooth, elastic dough. Cover and let rise until doubled in volume (approx. 50–60 minutes).
  • Shaping Divide the risen dough into 8 equal pieces. Shape each into a roll and make the characteristic „kaiser“ slashes on the surface (with a stamp or a sharp knife).
  • Short final proof Let the rolls rest for another 10 minutes on a baking sheet lined with parchment paper. If you're in a hurry you can skip this step, but it's recommended for better fluffiness.
  • Brushing and topping Brush with beaten egg and sprinkle with sesame seeds, poppy seeds, or caraway.
  • Baking Bake in an oven preheated to 200 °C for 15–20 minutes until golden. After baking, let cool briefly on a wire rack.

Number of servings:

8 kaiser rolls

Total preparation time:

1 hour 35 minutes (10 min mixing and shaping + 60 min rising + 10 min final proofing + 15–20 min baking)

Tips for the best result:

  • For an even crispier crust place an ovenproof dish with hot water on the bottom of the oven or bake with steam for the first 3 minutes.

  • A mix of plain and semi-coarse flour gives a wonderfully elastic dough that doesn’t tear and is great to work with.

  • Make the slashes just before baking – this helps the kaiser rolls keep their shape and „open“ nicely.

Conclusion:

Homemade kaiser rolls are quick, inexpensive and unbeatable in taste. Once you try them, store-bought baked goods will seem unnecessary. They’re great for sandwiches, with salads and with soups – and thanks to the simple method they’ll turn out well even for beginners.
