The secret recipe „from the uncle at the pub“, which turns ordinary lángos into something top-notch: the dough is easy to handle, it puffs up beautifully when fried, and after spreading with sour cream and sprinkling with cheese it’s an irresistible classic. Ideal for weekend cooking or a quick dinner for the whole family.

Preparation procedure

  • Yeast starter: Crumble the yeast into a bowl, add ½ teaspoon of sugar, 1 teaspoon of flour and a little lukewarm water. Mix and let rise for 10 minutes.
  • Dough: Put the remaining flour into a bowl, add the salt, the remaining sugar, the oil and the lukewarm water. Pour in the starter and work into a smooth, soft dough that does not stick.
  • First rise: Cover the bowl with plastic wrap or a cloth and let it rise for 40 minutes in a warm place.
  • Working in the oil: Add 1 tablespoon of oil to the risen dough, knead briefly, cover again and let rest for another 10 minutes.
  • Shaping: Divide the dough into 6 equal pieces and shape each into a ball. Stretch each ball with your fingers into a medium-thin disc with a thicker edge (the center can be a bit thinner — it will puff up better).
  • Frying: Heat a deep layer of oil in a pan to 170–180 °C. Add the lángos and fry on both sides until golden and reddish-brown, turning them as you go. Place finished ones on paper towels.
  • Serving: While still warm, spread sour cream on the lángos and generously sprinkle with grated cheese. Serve immediately.

Servings: 6 lángos

Total preparation time: approx. 1 hr 30 min (active 35 min, rising/rest 55 min)

Tips for perfect puffing

Don’t dust the dough with extra flour unnecessarily; instead oil your hands and work surface. The oil must be properly hot but not scorched; when you put a piece of dough in and it immediately starts to bubble, it’s time to fry.

Conclusion

These lángos are exactly as they should be: large, round, with a crispy edge and a fluffy center. Sour cream and cheese are a safe bet, but feel free to add a garlic spread or herbs. The recipe is simple and reliable, so it will quickly become a family favorite.
