  • Finely chop the onion and sauté in a little fat until golden.
  • Soak the roll in cold water, then squeeze it out well.
  • Finely chop the chicken livers with a knife or mince them. Add them to the sautéed onion.
  • Stir in the eggs, salt, pepper, the squeezed roll and enough flour to form a firmer but pliable dough. If desired, you can also add chopped parsley.
  • Bring water or broth to a boil in a pot. Using a spoon, shape smaller dumplings or gnocchi and drop them into the boiling water.
  • Cook for about 10–12 minutes, until the dumplings float and are firm.
  • Best served in hot homemade broth.
