Preparation procedure

  • Preparing the base: Crush the chocolate cookies finely (you can use a blender), mix them with the melted butter and a tablespoon of cream. Mix the mixture well and press it into the bottom of a cake pan lined with parchment paper. Put the base in the fridge to set.
  • Cream filling: Start whipping the cream and gradually beat in the condensed milk until you get a fluffy cream. Divide the cream into two parts – stir the cocoa into one and whip well.
  • Chocolate glaze: Break the dark chocolate into a bowl and pour the hot cream over it. Stir with a whisk until a smooth, glossy glaze forms.
  • Layering: Take the pan with the base out of the fridge. Alternately spread the white and cocoa creams – you can use a spoon or a piping bag for effect. Gently work a little chocolate glaze between the layers as well. Decorate the top as you like – for example by spreading the chocolate into a spiral.
  • Chilling: Place the finished cheesecake in the fridge for at least 4 hours, ideally overnight. If you want to serve the dessert as a popsicle cake, freeze it for 5–6 hours.
