Soft inside, gently crispy on the surface. This dough rises beautifully, shapes well, and thanks to the sparkling water the rolls have a fluffy crumb. If you don’t have sparkling water, use cold water – it works great. It’s made from common ingredients and the result is a sure thing for breakfast or dinner.

Preparation procedure

  • Mix the dough Mix the flour with the salt. Dissolve the sugar and yeast in lukewarm milk. Add to the flour together with the oil and sparkling water. Knead until smooth and elastic. By hand about 8–10 minutes, in a mixer 5–6 minutes.
  • First rise Cover the bowl and let rise in a warm place for 60–70 minutes, until the dough doubles in volume.
  • Shaping the rolls Divide the risen dough into 10–12 pieces. Roll each into a strand and braid a classic roll or shape into buns. Transfer to a baking sheet lined with parchment paper.
  • Final proofing and brushing Let rise freely for 30 minutes. Brush with beaten egg and sprinkle with seeds.
  • Baking Preheat the oven to 250 °C. After placing the tray, reduce to 190 °C and bake 18–22 minutes until golden. Do not use fan; use top and bottom heat.
  • Cooling Let the rolls cool on a rack; the crust will remain crispy and the crumb will not be soggy.

Total preparation time 2 hours 10 minutes (20 minutes active + 60–70 minutes first rise + 30 minutes final proofing + 20 minutes baking)

Number of pieces 10–12 rolls

Tips and variations

  • Don’t have sparkling water

Replace it with the same amount of cold water. The rolls will still be moist.

  • Even better crust

Place an empty baking tray in the bottom of the oven while preheating. After putting in the rolls, splash a cup of hot water onto it to create steam.

  • Spiced version

Add a pinch of dried garlic or a teaspoon of herbs to the dough.

Conclusion

From one bowl and a few accessible ingredients you can make rolls that easily outperform the bakery in taste. Sparkling water or cold water makes the crumb fluffy, and quickly lowering the oven temperature ensures color and crispiness. Save the recipe to your repertoire – it’s versatile and reliable.
