Preparation procedure

  • Cut the chicken breasts into long strips and place them in the mixture of buttermilk, salt, garlic and paprika. Let rest for at least two hours, but preferably overnight, so the meat becomes nicely tender and absorbs the flavor.
  • In another bowl prepare the flour mixture from all the dry ingredients. This combination will ensure the characteristic crispy coating similar to the original.
  • Remove the strips from the marinade and thoroughly coat them in the flour. Then briefly dip them back into the buttermilk and coat them again in the flour mixture. This double coating creates a thick and airy crust that will crinkle nicely when fried.
  • Heat the oil in a pot to around 170–180 °C. Add the strips gradually so the oil doesn't cool down, and fry them until golden brown. After removing them, let them drain briefly on a paper towel to get rid of excess oil.

If you want to give the strips a truly „KFC styl“, lightly shake them in a bowl with flour after breading. This will create small clumps and ridges that, after frying, make that typical, airy-crispy crust.
