If you want to have a healthy, aromatic and wholesome sauce on hand in winter that goes well with pasta, meat and vegetables, try this homemade version. It combines the sweetness of tomatoes, the delicacy of peppers and the distinctive flavor of eggplant – all without chemical additives.

  • Preparing the vegetables Wash the tomatoes and cut them into pieces (for a smoother texture you can peel them). Remove the seeds from the peppers and cut into strips, cut the eggplant into cubes. Finely chop the onion and garlic.
  • Sautéing and stewing Heat the oil in a deep pot, sauté the onion with the garlic until golden. Add the peppers and eggplant and briefly sauté.
  • Combining with the tomatoes Stir in the tomatoes, season with salt, sweeten, add herbs and a little water. Simmer the mixture covered for about 30–40 minutes, until the vegetables soften and release their juices.
  • Adjusting the consistency If necessary, blend or pass the mixture through a sieve into a smooth sauce. Season with vinegar, and if needed add more salt or sugar.
  • Filling the jars Pour the hot sauce into clean, sterilized jars. Close with lids and sterilize for 15–20 minutes.
  • Storage Let the jars cool upside down and then store them in a cool, dark place (pantry, cellar).
