When you want a “base” for everything – pasta, pizza, roast chicken and grilled meat – this tomato sauce is a safe bet. It’s made from fresh tomatoes, two types of peppers, garlic and parsley. Vinegar and olive oil balance the sweetness of the tomatoes, resulting in a full, lightly spicy flavor. Make a larger batch and can some of it – you’ll be ready anytime.

Preparation procedure

  • Blending the tomatoes Wash the tomatoes, cut them into pieces and blend until smooth (hand blender/food processor).
  • Sauce base Pour the olive oil and vinegar into a large pot and bring to a boil. Add the blended tomatoes, stir and cook for 35–40 minutes over medium heat, stirring occasionally.
  • Vegetables and herbs Meanwhile, cut the red and green peppers into small cubes. Add the peppers, pressed garlic, chopped parsley and salt to the pot. Add pepper or a pinch of sugar to taste. Cook for another 15 minutes so the sauce thickens and the flavors meld.
  • Filling jars (optional – canning) Prepare sterile jars and lids (boil for 10 min, or in the oven at 110 °C for 10–15 min). Pour the hot sauce into the jars up to the rim, clean the edges, close tightly and turn upside down. Let cool and store in a cool, dark place. Consume opened sauce in the refrigerator within 3–4 days; it can also be frozen in portions.
