Proper buns made from yeasted dough are a sure bet. This dough is tender, moist and holds the filling nicely. Thanks to the classic starter made from fresh yeast and a short final rise on the tray, the buns will be fluffy and fragrant. You can fill them with plum butter, marmalade or jam – depending on taste and season.

Preparation procedure

  • Starter (10 min) Crumble the yeast into a bowl, add the sugar, a tablespoon of flour and the lukewarm milk. Stir and leave in a warm place to rise (the surface will foam).
  • Dough (10 min) Put the flour, sugar and salt into a bowl. Add the eggs, risen starter, lukewarm milk and melted butter. Work into a smooth, elastic dough (by hand or with dough hooks).
  • First rise (45 min) Cover the bowl and let the dough rise until it doubles in volume.
  • Shaping (15 min) Turn the dough out onto a lightly floured work surface, divide into 12 pieces. Flatten each piece, place a teaspoon of jam in the middle, carefully seal with the seam down and shape into a bun.
  • Final proofing (10–15 min) Place the buns on a baking sheet lined with parchment paper (or into a greased baking dish) close to each other. Loosely cover and let rise another 10–15 minutes. Brush with beaten egg.
  • Baking (20–25 min) Bake in an oven preheated to 180 °C until golden, approximately 20–25 minutes. After removing from the oven, you can lightly brush the surface with melted butter for shine and moistness.

Tip: Choose a thick filling so it doesn’t leak during baking. Plum butter, curd cheese, poppy seeds or nuts are also great.
