Preparation procedure

  • Preparing the dough: Sift the flour and powdered sugar into a bowl. Add the honey, softened butter, eggs, egg yolk and baking soda. Quickly work into a smooth, uniform dough.
  • Shaping and baking: On a floured surface, roll the dough out to about 3 mm thickness. Use a glass or cutter to cut out rounds. Transfer them to a baking sheet lined with parchment paper and bake in a preheated oven at 180 °C for 6–7 minutes, until lightly golden. Do not overbake to keep them soft.
  • Preparing the cream: Whisk the Zlatý klas into the milk and cook a thick pudding. After cooking, cover the surface with cling film to prevent a skin from forming, and let it cool completely. Beat the softened butter with the powdered sugar until fluffy and gradually beat in the cooled pudding. Ensure both mixtures are at the same temperature, otherwise the cream may curdle.
  • Preparing the whipped cream: Mix the cold whipping cream with the Smeta-fix and sugar and whip until stiff.
  • Assembling the rounds: Spread cream on one honey round, add whipped cream on top, and cover with a second round. Gently press so the layers join. Let the rounds rest in the refrigerator preferably overnight so the dough becomes nicely softened.
  • Finishing: Dust with powdered sugar before serving and serve chilled.
