Preparation procedure

  • Preparing the cream In a small bowl whisk the pudding powder, flour and a little cold milk into a smooth paste. Bring the remaining milk to a boil with the sugar and vanilla sugar. As soon as it begins to boil, pour in the pudding paste and, stirring constantly, cook into a thick custard. Cover with cling film (to prevent a skin forming) and let cool completely. Whip the butter until fluffy and gradually incorporate the cooled pudding into it.
  • Preparing the cake layers Mix the flour with the baking soda. In a bowl cream the butter with the sugar, add the eggs and honey. Stir in the flour mixture and work into a smooth dough. Divide into two halves. Roll out one half onto a baking tray lined with parchment paper, prick several times with a fork and bake in an oven preheated to 180 °C for about 10 minutes until golden. Let cool.
  • Walnut filling Melt the butter in a pan, add the sugar and honey. Once they have dissolved, stir in the ground walnuts and briefly sauté so the flavors combine. Roll out the second half of the dough and place on a baking tray. Prick with a fork, spread the walnut mixture on top and bake for 10 minutes at 180 °C. Let cool.
  • Assembling the cake Spread the vanilla buttercream over the first baked layer and level the surface. Cover with the second walnut layer and gently press down. Place the cake in the refrigerator for at least 2 hours so the cream can set and the flavors can meld.
