  • Fruit preparation: Wash the fruit and if you are using stone fruit (cherries, sour cherries, apricots), remove the stones.
  • Adding the sugar: Place the fruit in a bowl and cover with sugar. Leave to stand in a cool place overnight to allow the juices to be released.
  • Cooking the mixture: The next day transfer the mixture to a pot and put it on the stove. Once the mixture begins to boil, add the lemon juice. Cook for another 5 minutes.
  • Filling the jars: Pour the hot mixture into clean jars and seal tightly with lids.
  • Cooling: Turn the jars upside down, wrap them in a towel and let them cool for several hours.
