These mug pancakes are doable by anyone – you only measure with a cup, the batter is ready in minutes and the result is beautifully thin, flexible and tender. You can scent them with vanilla or cinnamon and fill them with what you like. An ideal weekend breakfast and a quick dinner.

Preparation procedure

  • Prepare the batter by sifting the flour into a bowl, adding the salt, baking powder and vanilla sugar or cinnamon. Stir in the eggs and oil.
  • Warm the milk slightly (it doesn't need to be hot), and while whisking constantly pour it in a thin stream into the flour mixture until a smooth, lump-free batter forms. Pour in the water and whisk again.
  • Let the batter rest for 10–20 minutes so the flour hydrates evenly and the pancakes are flexible.
  • Heat the pan over medium heat. Before the first pancake drop a little oil, ladle out a thin layer of batter and spread it with a circular motion.
  • Fry until golden, flip and briefly cook the other side. Usually you don't need to grease the pan for subsequent pancakes (depends on the pan).
  • Fill with jam, quark, chocolate spread, fruit or cinnamon sugar.

Servings: approx. 4–6 (12–16 pancakes depending on size)

Total preparation time: 35–45 minutes (10 min prep + 10–20 min resting + 15 min frying)

Tips:

  • For extra-elastic pancakes add 1 tablespoon of rum to the batter – it will improve the aroma and, by evaporating, help prevent tearing.

  • If you want completely thin pancakes, thin the batter with a tablespoon or two of water just before frying.

  • Savory version: omit vanilla/cinnamon, add a pinch of pepper and herbs, and fill with ham, cheese or spinach.
