This dumpling recipe is ideal if you want to prepare a tasty side that cooks easily directly in the soup. The dumplings will thereby gain a delicious flavor and are a great alternative to common side dishes. Plus, you can freeze them for later!

Preparation procedure

  • Preparing the bread: Pour a little milk over the bread cut into small cubes – just enough to moisten the bread. If the mixture seems too dry, you can add more milk later.
  • Frying the onions and bacon: Finely chop the onion and sauté it in a little oil until golden. Then add the chopped bacon and fry everything for a while until the bacon is crispy.
  • Mixing the dough: Add the mixture of fried onion and bacon, chopped parsley, beaten eggs, salt, pepper and a pinch of nutmeg to the bread. Mix everything well until a sticky mass forms. Let the mixture rest for about 15 minutes.
  • Shaping the dumplings: Divide the mixture into individual portions and wrap them in cling film, a cloth or a bag for head cheese. Tie tightly at both ends.
  • Cooking the dumplings: Cook the dumplings in boiling soup or broth for about 25 minutes. Cooking them in the soup will give them great flavor and enhance their tenderness.
  • Serving: Slice the finished dumplings and serve as a side with soup, meat or another sauce.

These tasty dumplings will be ideal as a side to broths or sauces. You can also freeze them and store for later.
