If you don’t like the processed cheese from the store, don’t despair! With this simple recipe for homemade processed cheese you’ll make a tasty alternative that you’ll love. This spreadable cheese is ideal for bread and you can enjoy it with various accompaniments.

  • 1. Preparation of the water bath: Prepare a taller stainless steel bowl and a smaller saucepan. Pour water into the saucepan halfway and bring it to a boil. The bowl should be placed above the saucepan so that it does not touch the water.
  • 2. Preparing the mixture: Put the soft curd cottage cheese, egg, salt, baking soda and softened butter into the stainless steel bowl. Blend everything thoroughly with an immersion blender. It is important that the butter is soft enough, but not melted, to ensure the correct consistency of the cheese.
  • 3. Cooking the mixture: Once you achieve a uniform consistency, transfer the bowl to the water bath. Cook the mixture, stirring constantly, until the mass melts. The consistency should be very viscous and stretchy. If you want to flavor the cheese, add spices to taste during cooking.
  • 4. Storing the cheese: Once you reach the desired consistency, prepare a mold (preferably a stainless steel or plastic container). Pour the liquid mixture into the mold and let it cool at room temperature. Then seal and put it in the refrigerator, where the mixture should fully set.
  • 5. Serving: After it sets, enjoy the homemade processed cheese on bread, in sandwiches, or as an accompaniment to various dishes.
