  • Preparing the eggplant: Wash the eggplant and cut it into strips or slices about 1 cm thick.
  • Cooking the eggplant: Mix the water with the vinegar in a pot and bring to a boil. Add the sliced eggplant and cook it for about 4 minutes so it softens but remains firm.
  • Cooling and seasoning: Let the cooked eggplant drain on a paper towel and cool. Sprinkle it with oregano or another spice to taste (you can use mint or add a chili pepper for a spicier flavor).
  • Pickling: Pack the eggplant into a sterilized container and intersperse it with garlic sliced into rounds. Finally pour everything over with olive oil, stir with a fork to remove any air bubbles.
  • Sterilization: Seal the container and immerse it in boiling water for 30 minutes.
  • Storage: Store in a dark, cool place. After a few days the eggplant is ready to eat.
