Preparation procedure

  • Biscuit base. Blitz or crush the biscuits finely. Stir in the cocoa and a tablespoon of powdered sugar, add the rum and milk. Work into a compact, pliable mass.
  • Spreading. Press the mixture into a pan lined with baking paper (approx. 20 × 20 cm). Smooth the surface level, layer height about 1 cm.
  • Coconut cream. Whip the butter with the powdered sugar into a pale foam, mix in the coconut. Spread the cream evenly over the biscuit layer.
  • Chilling. Put the pan in the refrigerator for 45–60 minutes to allow the cream to firm up.
  • Coating. Melt the chocolate (with the oil) in a bain-marie or briefly in the microwave, stir until smooth and spread a thin layer over the chilled cream. Let chill for another 20–30 minutes.
  • Cutting. Cut into small cubes with a sharp knife. For clean cuts, wipe the knife after each stroke.

Total preparation time: 1 hour 30 minutes (20 minutes preparation + 70 minutes chilling)

  • Alcohol-free: Replace the rum with milk or a spoonful of strong espresso for a more pronounced flavor.

  • Sweetness to taste: You can easily reduce or add powdered sugar in the cream – the coconut will “absorb” part of the sweetness.

  • Sheet pan vs. loaf pan: If you use a narrower pan, the layers will be higher – extend chilling by 10–15 minutes.

Storage

Store the cubes covered in the refrigerator, they will keep for 4–5 days. For festive occasions you can also freeze them; before serving let them thaw gradually in the refrigerator.
