Preparation procedure

Whip the egg whites with the salt and the remaining sugar until stiff peaks form. Gently fold the two mixtures together and spread onto a baking sheet in the shape of bufler (round sponge cakes). Bake until golden.
  • Meringue layer: Whip additional egg whites with sugar into a thick glossy meringue. Spread onto the baked bufler in layers (usually 3 layers per piece) and let dry (drying process of the meringue).
  • Preparing the coating: Melt the chocolate and optionally add a small amount of butter or cream so the coating is smooth and fluid.
  • Finishing the dessert: Dip each piece (bottom part) into the chocolate coating. Let the coating set.
  • Serving and storage: Store Indiánky in a dry place, ideally in a cool environment. Too humid a room can cause the meringue layer to soften.
