Preparation procedure
- Whipping the egg whites: Beat the egg whites into stiff peaks.
- Mixing the yolks: Whip the yolks with the granulated sugar until frothy. Gradually add the flour mixed with the baking powder and the rum.
- Combining the mixtures: Gently fold the yolk mixture with the beaten egg whites and add the ground nuts.
- Baking: Spread the batter onto a baking sheet lined with parchment paper and bake in an oven preheated to 180°C until golden (about 20 minutes).
- Egg yolk cream: Whip the yolks with the powdered sugar in a double boiler until thick and foamy (about 15–20 minutes). Remove from the bain-marie and continue whipping until the cream cools.
- Mixing with the coffee: Dissolve the vanilla sugar in the milk and stir in the instant coffee. Add this mixture to the cooled egg yolk cream.
- Combining with the butter: Beat the butter until fluffy and gradually incorporate it into the cream by spoonfuls. Finally, stir in the chopped nuts.
- Assembling the dessert: Spread the cream evenly over the cooled dough and place in the refrigerator for an hour.
- Preparing the glaze: Melt the chocolate and butter in a double boiler or in the microwave and pour the chocolate glaze over the cream.
- Serving: After the chocolate has set, you can cut the dessert and serve.
