Preparation procedure

  • Dough: In slightly lukewarm milk dissolve the yeast with a teaspoon of sugar and let the starter rise for 10 min. In a large bowl mix the starter with the remaining ingredients for the dough and work by hand or in a mixer until smooth and elastic. Cover with a cloth and leave to rise in a warm place until doubled in volume (approx. 1 hour).
  • Poppy seed filling: In a saucepan mix the poppy seeds, sugar, cinnamon, lemon zest and milk. Heat and stir until the ingredients combine, then let cool.
  • Curd filling: In a bowl combine the curd, lemon juice, pudding powder, egg yolk and sugar. Store in the refrigerator.
  • Crumble: Quickly rub all the ingredients together with your fingers until a crumb forms.
  • Assembling the cake: Roll the risen dough out onto a baking sheet lined with parchment paper. Spread first the curd filling, then the poppy seed filling. Brush with apricot jam and sprinkle with the crumble.
  • Baking: Bake in an oven preheated to 180 °C for 30–40 min, until the cake turns golden. After taking out of the oven let cool slightly, then cut into portions.
