Preparation procedure

  • Preparation of the dough: In a saucepan bring the water with a pinch of salt and the butter to a boil. As soon as the mixture starts to boil, add the flour and, stirring constantly, form a thick choux pastry. Let it cool slightly and then beat in the eggs one at a time – work each in thoroughly until a smooth dough forms.
  • Baking: Divide the dough into two parts and spread them onto baking sheets lined with parchment paper. Bake in an oven preheated to 250 °C for about 10 minutes, until the dough puffs up and turns golden. Do not open the oven during baking. Let the baked layers cool.
  • Vanilla cream: Mix the pudding powders into part of the cold milk, bring the remaining milk with the sugar to a boil and then whisk in the pudding mixture. Cook until thickened, let cool. Whip the butter until fluffy and gradually beat in the cooled pudding until you obtain a smooth cream.
  • Fruit cream: Place the fruit in a saucepan, sprinkle with sugar and briefly stew to release its juices. Add the cornstarch dissolved in a little water and cook until the mixture thickens. Let cool.
  • Whipped cream: Whip the cream into stiff peaks.
  • Assembly: Spread the vanilla cream on the bottom layer and smooth it. Spread the fruit cream on top, then add a layer of whipped cream. Place the second layer on top, press lightly and dust with powdered sugar. Chill for 2–3 hours so the dessert sets and the flavors meld.
