This traditional recipe for yeast rolls with walnut and poppy seed filling comes from my grandmother’s cookbook. The rolls are incredibly tender, fluffy and beautifully scented with honey and butter. Preparation procedure

  • Filling preparation For the walnut filling, mix the ground walnuts with the sugar and jam, then pour in the hot milk and stir until spreadable consistency. For the poppy seed filling, mix the ground poppy seeds with the sugar, jam and hot milk until a smooth paste forms.
  • Dough preparation Dissolve the yeast with the sugar and warm milk, let rest for 10 minutes. In a bowl, mix the flour with the salt, add the water, 30 ml oil and the starter. Mix until the ingredients come together, then add another 20 ml of oil and knead the dough thoroughly. Brush the finished dough with a little oil, cover with a cloth and let rise for 30 minutes in a warm place.
  • Shaping the roll Divide the risen dough into four parts and form a ball from each. Let them rest for 15 minutes. Then roll each ball into a thin rectangle, spread with the prepared filling and carefully roll up. Place the rolls on a baking sheet lined with parchment paper, insert a strip of paper between the individual pieces so they don't stick together.
  • Baking Brush the rolls with the egg yolk and milk mixture, let them rise for another 20 minutes and then prick them with a spatula so air can escape. Bake in a preheated oven at 180 °C for about 20 minutes, until golden.
