Išelské Christmas cookies have their history and tradition in many households. These delicious cookies combine a tender cocoa dough with a delicate nut filling and chocolate glaze. Their preparation is not complicated, and the result is tasty cookies that disappear from the table at lightning speed.

Preparation procedure
- Preparing the dough: Mix all the ingredients for the dough (flour, butter, sugar, nuts, egg yolks, cocoa, cinnamon and lemon zest) and work into a smooth dough. Wrap the dough in cling film and let it rest in the refrigerator for at least an hour.
- Preparing the filling: Meanwhile, prepare the nut filling. In a bowl, mix the ground nuts, butter, powdered sugar, a little rum and apricot jam. The filling should have a firmer consistency.
- Shaping and baking the cookies: Roll out the rested dough on a floured surface to about 4 mm thickness. Cut out circles or other Christmas shapes and arrange them on a baking sheet lined with parchment paper. Bake in a preheated oven at 200 °C for approximately 10 minutes. Watch the cookies so they stay light and do not become too dark.
- Filling and decoration: After baking, let the cookies cool, then sandwich them together with the nut filling. Dip each sandwiched cookie into the chocolate glaze and decorate with half a nut. Let the glaze set.
- Storage: Place the finished cookies into a tin or box and store in a cool place, ideally in the refrigerator or on the balcony. The cookies will be even better if allowed to rest for a few days before serving.
