Ingredients: 200 g plain flour; 140 g butter; 70 g powdered sugar; 3 tablespoons cocoa; 1 egg yolk; 3 eggs; 150 g sugar; 1 packet/portion vanilla sugar; 100 g softened butter; 100 g dark cooking chocolate; 4 tablespoons milk; 4 tablespoons oil; chopped pistachios or walnut halves

Preparation procedure

We work the flour, butter, powdered sugar, cocoa and yolk into a smooth and firm dough. Wrap it in cling film and place it in the fridge for 30 minutes. Then roll the dough out on a lightly floured work surface to a thickness of about 3 mm and cut out rounds. Transfer them to a baking tray lined with parchment paper. Bake at 180 °C for approximately 13 minutes and let cool completely.
Meanwhile prepare the cream. Whisk the eggs with the sugar and vanilla sugar until foamy, then heat the mixture over a water bath until it begins to thicken. Let the finished cream cool. Whip the butter until fluffy and combine it with the cooled cream. Chill the cream for at least another 30 minutes.
Melt the chocolate, milk and oil over steam and stir until you have a smooth, glossy glaze. Dip half of the baked rounds into the glaze and, if desired, decorate with pistachios or walnut halves. Pipe the cream onto the non-dipped rounds and top with a chocolate-covered round. Store the finished cookies in the cold, where they will set nicely.
