Preparation procedure

  • Preparation of the cocoa batter: In a small saucepan melt the butter, add the water, sugar and cocoa. Heat over low heat and stir until all ingredients combine. A thicker mixture will form; let it cool. Whisk the yolks into the cooled cocoa mixture. Add the flour with the baking powder and mix thoroughly. Finally, gently fold in the stiff beaten egg whites. Pour half of the batter into a greased and floured baking pan.
  • Cottage cheese filling: Beat the egg whites until stiff. In another bowl, beat the yolks with the sugar and pudding powder, add the softened butter and cottage cheese. Mix everything into a smooth cream and finally gently fold in the egg white foam. Spread the cottage cheese filling evenly over the first layer of cocoa batter and smooth it. Then pour the second half of the cocoa batter on top.
  • Baking: Bake the cake in an oven preheated to 180 °C for approximately 50 minutes, until the surface is springy and lightly golden. Let cool.
  • Lemon glaze: Make a smooth glaze from the lemon juice and powdered sugar (adjust the amount of sugar to the desired thickness). Spread the glaze over the cooled cake and let set.
