Preparation procedure

  • Preparing the cocoa dough: In a small pot, heat the butter, water, sugar and cocoa. Stir until everything melts and a thicker cocoa mixture forms. Let it cool. Meanwhile, beat the egg whites to stiff peaks. Gradually whisk the yolks into the cooled cocoa mixture, add the flour mixed with the baking powder and mix thoroughly. Finally, gently fold in the beaten egg whites.
  • Quark filling: Beat the yolks with the sugar and pudding, add the softened butter and mix until smooth. Then add the quark and combine thoroughly. Finally, fold in the stiff egg white foam.
  • Assembling the cake: Pour half of the cocoa dough onto a greased and floured baking sheet. Spread the quark cream evenly over it and cover with the remaining cocoa dough.
  • Baking: Bake the cake in a preheated oven at 180 °C for about 50 minutes. After baking, let it cool.
  • Lemon glaze: In a bowl, mix the lemon juice with the powdered sugar until a smooth glaze forms. Pour it over the cooled cake and let it set.
