Incredibly tender and juicy patties combine ground meat with seasonal vegetables – zucchini and head cabbage. Thanks to braising in butter and water they remain wonderfully moist and fragrant. You can prepare them quickly and cheaply; they taste great with potatoes and even on their own with sour cream.

Preparation procedure

  • Preparing the vegetables Cut the zucchini into smaller pieces (no need to peel), coarsely chop the cabbage. Put both into a blender and blend until fine.
  • Draining the juice Place the vegetable mixture in a sieve or a clean cloth and let it drain for 10 minutes so the patties are not too watery.
  • Combining the ingredients In a bowl mix the ground meat, grated onion, eggs, salt, pepper and the drained vegetables. Add the flour and mix thoroughly until the mixture holds together.
  • Shaping and frying Form smaller patties from the meat mixture. Heat oil in a pan and fry the patties until golden on each side (about 3–4 minutes per side).
  • Simmering in butter Transfer the patties to a clean pan, add the butter and water, cover and simmer over low heat for 10 minutes. Occasionally baste them with the juices so they stay nicely moist.
  • Serving Serve with new potatoes and fresh dill, or with a spoonful of sour cream.
