  • Preparing the plums Wash the plums, dry them, halve them and remove the pits. Mix them with 3 tablespoons of sugar and the cinnamon. Let stand briefly to release their juices.
  • Preparing the dough Beat the yolks with the powdered sugar and softened butter until light and creamy. Add the all-purpose flour mixed with baking powder and the milk. Work into a smooth batter.
  • Baking the base Preheat the oven to 180 °C. Line a baking sheet approximately 30 × 40 cm with parchment paper. Spread the batter evenly and arrange the prepared plums on top. Bake for 35–40 minutes, until the batter turns golden. Then remove the cake from the oven and reduce the temperature to 150 °C.
  • Preparing the meringue Whisk the egg whites with a pinch of salt until soft peaks form. Gradually add the powdered sugar and lemon juice until you achieve a stiff, glossy meringue.
