- Dough preparation: Whisk the egg whites until stiff peaks form. Gradually add the vanilla sugar and granulated sugar. When you have a glossy, firm meringue, fold in the beaten egg yolks. Finally, gently fold in the ground walnuts.
- Baking: Preheat the oven to 180 °C. Prepare a baking sheet lined with parchment paper and spread the dough evenly onto it. Bake for about 12–15 minutes, until the surface turns golden.
- Rolling: After baking, immediately remove the dough from the sheet and peel off the parchment paper. If the paper doesn't come off easily, cover the dough with a damp cloth and after a short while it will come off more easily.
- Preparing the filling: Sweeten the sour cream to taste (you can also use honey or other sweeteners) and spread it evenly over the cooled dough.
- Rolling and chilling: Carefully roll the dough with the filling into a roll. Then place the roll in the refrigerator to firm up well. Before serving, dust with powdered sugar.
