Preparation procedure

  • Preparation of the cocoa sponges Beat the egg whites into stiff peaks with a pinch of salt, gradually beat in the sugar, then the yolks. Finally fold in the flour mixed with cocoa and baking powder. Spread the batter on a baking sheet lined with parchment paper (30 × 40 cm) and bake at 200 °C for about 15 minutes. Bake two identical sheets. Let cool and peel off the paper.
  • Nut sponge Chop the nuts and toast them in a dry pan. Let cool. Beat the egg whites into stiff peaks, add the sugar, raisins, nuts, flour and oil. Gently mix and bake on a sheet (30 × 40 cm) at 180 °C for about 20 minutes.
  • Cream Whisk the eggs, sugar and vanilla sugar over a double boiler into a thick cream. Let cool. Whip the room-temperature butter until fluffy and gradually beat in the cooled egg cream in portions. Finally stir in the instant coffee. Reserve a little of the cream to spread on the surface.
  • Assembling the dessert Place the cocoa layer on the bottom, spread half of the cream, then the nut sponge and the remaining cream. Cover with the second cocoa layer, lightly press down and refrigerate for 2 hours.
  • Finishing Spread the remaining cream over the surface and pour over the melted chocolate glaze. After it has set, cut into slices with a sharp knife.
