This recipe for kefir fritters is among the simplest and most rewarding. You can make them literally in a few minutes and they taste great both savory with cheese or ham, and sweet with jam, sugar or honey. Thanks to the kefir (or sour cream) the fritters are fluffy, soft and stay fresh for a long time.

  • Dough preparation: In a bowl, whisk the eggs with the kefir or sour cream. Add the flour mixed with the baking powder and work into a smooth dough. It shouldn't be too stiff – ideally so it can be rolled out. If the dough is thinner, you can scoop it with a spoon and drop it into the oil in portions.
  • Shaping and frying: Roll the dough out on a lightly floured surface and cut into smaller squares. Fry in well-heated oil, but not too hot – otherwise the fritters will burn on the outside and remain raw inside. Conversely, cold oil would cause them to soak up fat. Fry until golden on both sides.
  • Serving: You can serve kefir fritters: savory – for example with cheese, ham or a garlic dip, sweet – with jam, honey or sprinkled with icing sugar.
