Summer in Slovakia and the Czech Republic is inseparably associated with the smell of grilled sausages, cotton candy and above all crispy langos with cheese and sour cream. This treat is a classic at fairs, swimming spots and festivals. Few people know, however, that it can easily be made at home – simply, cheaply and with a taste that matches that from a stall.

Preparation procedure

  • Yeast dough: Crumble the fresh yeast into lukewarm milk, add the sugar and let it rise for a few minutes. (If using dry yeast, add it directly to the flour.) Then mix all the ingredients and work into a smooth dough that does not stick.
  • Rising: Cover the bowl with a cloth and let it rise for about an hour in a warm place.
  • Shaping: Tear off smaller pieces from the risen dough and stretch them with your hands into flat rounds. Leave the center thinner and the edges slightly thicker.
  • Frying: Fry the flatbreads in a sufficient amount of hot oil until golden on both sides.
  • Serving: Serve langos traditionally with garlic, sour cream and grated cheese. They are also great with ham, vegetables or even sweet – for example with jam or chocolate topping.

  • Number of servings: 8–10 langos

If you want an even softer dough, add a tablespoon of sour cream. And remember – the oil must be properly hot so the langos don’t become greasy.
